Red Lentil Thai Chili

Ingredients
  • 1 Red Bell Pepper (or Orange or Yellow), seeded and diced
  • 1 c. Diced Carrots
  • 1½ T. Minced Garlic
  • 1½ lb. Diced Butternut Squash
  • 1 c. Red Lentils
  • 4 c. Vegetable Broth
  • 1, 15 oz. Can Dark Red Kidney Beans, rinsed and drained
  • 1, 15 oz. Can Black Beans, rinsed and drained
  • 2 T. Thai Green Curry Paste (original recipe called for Red Curry Paste but my store was out)
  • 28 oz. Can Diced Tomatoes
  • 2 T. Chili Powder
  • 1-2 t. Sea Salt
  • 1, 15 oz. Can Low-Fat, Unsweetened Coconut Milk
  • Juice of One Lime
  • Cilantro (for garnish)

Instructions
  1. Put all ingredients in a 5-6 qt. crockpot except for the coconut milk, lime juice and cilantro. Cook on low for 8 hours. Add coconut milk and lime juice. Ladle into bowls and garnish with cilantro.
